When you’re eating clean or paleo or whatever, you should pay attention to not only what you are eating, but where your food comes from. A lot of supermarket food is not regulated as closely as organic labeled food, not to mention all of the chemicals, antibiotics and other crap that is in non-organic choices. It is important to know where your food comes from. You can grow your own, but if that isn’t an option for you, try to find local sources of meat, fruits and vegetables. Visit the farmer’s market, community garden or buy from your neighbors.

Growing fruits and vegetables seems overwhelming to most people, but it’s actually much simpler than it sounds. You don’t even have to trade in your suburban or urban lifestyle for a life in the sticks in the name of self-sufficiency or savings. All you need is a few square feet of the great outdoors, a water source, and a little time. You can plant a garden anywhere! Plant tomatoes in a container on your porch or balcony. Grow herbs on your kitchen window sill. Our grandparents did it, and so can you. Some of my fondest memories are sitting in my grandma’s garden eating sweet peas!

Take charge of your food! It is cheaper to grow it than to eat out!

Your grocery bill will shrink as you begin to stock your pantry with fresh produce from your backyard. A packet of seeds can cost less than a dollar. If you learn to dry, can, or otherwise preserve your harvest, you’ll be able to feed yourself even when the growing season is over.

Quinoa and Black Beans

Try something new!

After some trepidation about trying quinoa, I decided to take the leap. Eating healthy is all about exploring new foods and expanding your taste buds!

Quinoa Quinoa and Black Beans
Quinoa (pronounced keen-wa) is a grain-like crop from South America, grown for its edible seeds. It is a pseudo-cereal rather than a true cereal, or grain, as it is not a member of the true grass family. As a chenopod, quinoa is closely related to species such as beets, spinach and tumbleweeds. Quinoa seeds are in general cooked the same way as rice and can be used in a wide range of dishes.

I scoured the internet for recipes that sounded appetizing, and came up with a few. Since we were having Bourbon Lime Tilapia for dinner, I went with a recipe from AllRecipes.com. However it did need some modification, it was a little bland.

Original Recipe

Quinoa and Black Beans

Serves 10

  • 1 teaspoon organic coconut oil0408c1adede674ac1cfa704720e49dae 380x250 v2 Quinoa and Black Beans
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, peeled and chopped
  • 3/4 cup uncooked organic quinoa
  • 1 1/2 cups vegetable broth or chicken broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2 tsp chili powder
  • 1 tsp oregano
  • salt and pepper to taste
  • 1 cup frozen corn kernels
  • 1 (15 ounce) can black beans, rinsed and drained — the original recipe called for two, but to me that was over-kill
  • 1/2 cup chopped fresh cilantro
  1. Heat the oil in a medium saucepan over medium heat. Stir in the onion, pepper and garlic, and saute until lightly browned.
  2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, chili powder, oregano, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
  3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
  4. Once the quinoa is done, stir into the bean and corn mixture.
